Besides being a family fave, this recipe is great if you need to take a meal to someone. It’s super filling (with the chicken, stuffing, and swiss cheese) and the white wine combined with the herbs in the stuffing is a delightful flavor combo (the alcohol cooks out while this dish is in the oven) Best part??? I’ve never had anyone not like it. win/win/win!
And here’s a bonus: It pairs nicely with a cooked vegetable and/or a green salad for a very easy meal prep and clean-up.
Company Chicken and Stuffing
4 small boneless, skinless chicken breasts
1- 10 1/3 oz can cream of chicken soup
1/4 cup white wine (can substitute water for this if you prefer but the flavor is amazing with the wine)
Swiss cheese slices
1 stick of butter, melted
1 box stuffing mix (I use Stove Top but others work equally as well)
Preheat oven to 350 degrees F.
In a 9×13 inch pan, place chicken breasts; do not overlap.
In a large bowl, combine soup, wine, melted butter and contents of stuffing box/pouch. Mix until evenly moistened. Spread stuffing mixture over chicken in pan and lay cheese slices over the top. Cover and bake at 350 for one hour. (If browning is desired, uncover during last 10 minutes of cook time.) Serves 4-6
